PERSIMMON BREAD (PLUM-CAKE DI CACHI)
Probably one of the best breads I’ve ever made: naturally sweet and with an amazing fall flavor 🍂, perfect for those who like “wet” breads and cakes.
I personally would do without the coconut sugar or add half the qty of each sugar as the persimmons are already very sweet of their own, but for those who like the extra sweetness, definitely go with them.
Excellent with a cup of coffee or cappuccino for a yummy breakfast!
Oserei dire uno dei migliori plum-cakes mai fatti: naturalmente dolce grazie ai cachi maturi (ho aggiunto pochissimo zucchero di cocco ma per chi – come me – non ama i dolci “troppi dolci” si può tranquillamente omettere), morbido, per nulla secco e dal sapore autunnale 🍂
Due fette di questa bontà con del caffè o cappuccino sono una colazione super!

- 125 g Spelt Flour
- 125 g oats blended into flour-like consistency (NOT oat flour)
- 2 tsp baking powder
- 1 tsp cinnamon
- 50 g coconut sugar
- 30 g Erythritol
- 350 g persimmon pulp very ripe
- 2 eggs
- 100 ml avocado oil or olive oil, but be sure it has a mild flavor
- pecans as needed, for decoration

- Blend into a cream the persimmons pulp and into a flour the oats (you’ll get a rough flour).
- With a whisk, mix well all of the dry ingredients then add – one by one – the wet ingredients. Place batter in the loaf pan and decorate with Pecan nuts or as desired.
- Place batter in a loaf pan (lined with parchment paper) and bake for 40 to 50 minutes at 350F. I left my bread in the oven for 45 minutes, then turned the oven off and let it sit inside for 5 extra minutes. If you have a powerful oven, 40 minutes should be enough.

- 125 g farina di farro
- 125 g fiocchi di avena ridotti in polvere che NON sono farina di avena!
- 2 cucchiaini lievito per dolci
- 1 cucchiaino cannella
- 50 g zucchero di cocco
- 30 g Eritritolo
- 350 g polpa di cachi belli maturi
- 2 uova
- 100 ml Olio di avocado (o di oliva ma che sia di gusto delicato)
- Noci Pecan quante bastano per decorare il pulm-cake
Ingredients

- Frullate la polpa di cachi per ottenerne una crema e frullate i fiocchi d’avena per ottenerne una polvere (non raffinata come la farina).
- Amalgamate bene gli ingredienti secchi con una frusta, poi aggiungete uno ad uno quelli liquidi.
- Versate l'impasto nella teglia e decorate a piacere con le noci pecan.
- Infornate a 180 gradi per 40-50 minuti a seconda del forno: io ho cotto per 45 minuti e lasciato altri 5 in forno spento. Se avete un forno potente, 40 minuti dovrebbero bastare.
