APPLE STRUDEL
This is one of the very best apple desserts I have ever made, besides my vegan apple pie: it has a crunchy pastry shell and a warm, sweet apple filling that you just can’t resist to!
I prepared it for our Christmas dinner and it was a success: definitely making this again!
What I love of this strudel is that it doesn’t require too much oil and it’s way healthier than what it looks like! It is a dessert but at the same time it can be a super healthy breakfast too.
You can make it gluten-free by replacing spelt flour with a gluten-free flour mix or vegan by replacing the eggs with either plant-based milk, more oil or simply water!
This strudel, like most of my baked goodies, is dairy-free, free of refined sugars and actually quite low in sugars considering that the dough is sweetened with erythritol and the only sugars come from the apples, the raisins and the little bit of raw coconut sugar added to the filling (which you can totally omit but I do not recommend so).
To make the dough I used an extra virgin olive oil that is infused with vanilla beans: I was shopping at Whole Foods and was looking for an extra-virgin olive oil when I saw this and I fell in love with it immediately. Since I do not use seed oils at all (too refined and for the most part unhealthy) and I usually only choose un-refined, extra-virgin, cold processed oils (the least refined, the better), my only choices when baking are usually coconut or avocado oils. Extra-virgin olive oil has a very strong taste so I try not to use it for baked goods unless it’s requested in very little amounts; un-refined and extra-virgin coconut oil is usually my go-to oil but it does leave a coconut taste to the dessert which, even though not unpleasant at all, in some desserts it just doesn’t really need to be there; avocado oil is another great choice, I’m actually using it more and more often for desserts but if I had to choose, I would always choose olive oils.
So, this oil is just what I needed for baking: it’s made on purpose for baking needs and has an amazing aroma of olive and vanilla!Although it wasn’t cheap, I was very happy with my purchase and it definitely turned out great for this strudel. You can easily replace it with regular extra-virgin olive oil or a coconut oil, my suggestion is to always use un-refined and extra-virgin oils regardless.

Questo è uno dei migliori dessert di mele che abbia mai fatto, oltre alla mia apple pie vegana: ha un guscio di pasta croccante e un ripieno dolce di mele a cui non si può resistere! L’ho preparato per il nostro pranzo di Natale ed è stato un successo: sicuramente un dolce che rifarò, perché’ ha ricevuto l’approvazione di tutti!
Quello che mi piace di questo strudel è che non richiede l’utilizzo di troppo olio o di burri vegetali ed è molto più salutare di quel sembra a guardarlo in foto!
È un dolce perfetto per fine pasto ma allo stesso tempo può andare benissimo anche per una colazione sana.
Si può fare senza glutine sostituendo la farina di farro con un mix di farina senza glutine oppure vegano sostituendo le uova con latte vegetale, altro olio o semplicemente acqua!
Questo strudel, come la maggior parte dei miei dolci, è senza latticini, senza zuccheri raffinati e in realtà a basso contenuto di zuccheri, considerando che nella frolla c’è solo eritritolo e gli unici zuccheri provengono dalle mele, dall’uvetta e da quel po’ di zucchero di cocco grezzo aggiunto al ripieno (che potete omettere totalmente ma che non consiglio di omettere).
Come olio nell’impasto ho utilizzato un olio extravergine di oliva infuso con baccelli di vaniglia: una specialità di olio, appositamente per dolci, che ho trovato mentre facevo la spesa da Whole Foods … nonostante il costo, non ci ho pensato su due volte a prenderlo!!
Visto che non uso per niente gli oli di semi (troppo raffinati e per la maggior parte non salutari) e di solito scelgo solo oli non raffinati, extravergine, spremuti a freddo (meno raffinati, meglio è), le mie uniche scelte quando faccio i dolci sono di solito l’olio di cocco o avocado.
L’olio extravergine di oliva ha un sapore molto forte quindi cerco di non utilizzarlo per i dolci, a meno che non venga richiesto in quantità minime.
L’olio di cocco non raffinato ed extravergine di solito è il mio olio preferito, ma lascia un sapore di cocco che, anche se non è affatto sgradevole e potrebbe a volte starci benissimo, in alcuni dolci non ha molto senso che si senta.
L’olio di avocado è un’altra ottima scelta, in realtà lo uso sempre più spesso per i dolci ma se dovessi scegliere, sceglierei sempre olio d’oliva.
Dunque, direi che questo mio acquisto è proprio quello che mi serviva: è fatto apposta per dolci, ha un irresistibile aroma di oliva e vaniglia e si è rivelato ottimo per questo strudel.Visto che immagino non si trovi facilmente, potete sostituirlo con un normale olio extravergine di oliva o con olio di cocco, il mio suggerimento è comunque di utilizzare sempre oli non raffinati ed extravergine, mai olii industriali e lavorati ad alte temperature che ne uccidono i nutrienti.

- 300 g Spelt Flour
- 120 g almond meal
- 60 g Erythritol
- 2 medium eggs
- 20 g vanilla infused extra-virgin olive oil

- Start preparing the filling: peel and dice the apples into small cubes, then place them in a large glass bowl.
- Squeeze the lemon juice over the apples, add as much cinnamon as you like (I added quite a bit, at least 1 heaping tablespoon), coconut sugar and raisins.
- Mix well until all the ingredients are combined, then set aside.
- Meanwhile, prepare the pastry “shell" of the strudel: in a large bowl, add the flours, cinnamon and erythritol, mixing everything well with a whisk.
- Add the eggs and the oil and start stirring until the wet ingredients have been completely "absorbed" by the flour mixture. At this point you should have a crumbly dough that clearly needs more liquid and you will start adding the water (or milk) ONE SPOON AT A TIME, being careful not to use too much water, otherwise the dough will become sticky (and impossible to roll) and you will have to add more flour.
- I recommend starting with a tablespoon of water (or milk): stir well and then assess if you need more. You should need a lot less water han you think: no more than 100ml anyway.
- Knead your pastry dough, then form a loaf and roll it out with a rolling pin on a floured surface, giving it a rectangular shape and making it wide and long enough to contain the apple filling: the dough should be thin, but not too thin, you should be able to handle it without it breaking apart.
- Place the apple filling in the center of the pastry and "close" the strudel by folding the edges of the pastry over the apples, just as if you were wrapping a gift box! Brush the pastry with an egg, then bake at 350F for 30 minutes: turn off the oven and leave the strudel inside for another 5 ~ 10 minutes before taking it out.
- Let it cool, sprinkle powdered sugar or erythritol and serve.
- Great by itself, with yogurt or a scoop of vanilla ice cream!

- Cominciate a preparare il ripieno: sbucciate e tagliate a dadini non troppo grandi le mele e riponetele in un grilletto di vetro capiente.
- Spremete il succo del limone sulle mele, aggiungeteci quanta cannella desiderate (io ne ho aggiunta parecchia, almeno 1 cucchiaio bello colmo), l’eritritolo (o zucchero) e l’uvetta.
- Mescolate per bene fino ad amalgamare tutti gli ingredienti, poi mettete a riposare.
- Nel frattempo preparate il “guscio” dello strudel: unite le farine, la cannella e l’eritritolo amalgamando tutto bene con un frusta.
- Aggiungete le uova e l’olio e cominciate a rimestare fino a che gli ingredienti liquidi non sono stati completamente “assorbiti” dall’impasto di farina. Dovreste a questo punto avere un impasto sbricioloso che necessita di atro liquido. Solo allora comincerete ad aggiungere l’acqua o il latte vegetale CUCCHIAIO DOPO CUCCHIAIO, facendo ben attenzione a non esagerare, altrimenti l’impasto vi verrà troppo appiccicoso e dovrete aggiungere altra farina.
- Consiglio di aggiungere un cucchiaio di acqua (o latte), rimestare bene e poi valutare se ne serve altra. Ve ne dovrebbe servire molta meno di quel che pensate: non più di 100ml in ogni caso.
- Impastate la vostra frolla, poi formate un panetto e stendetelo con un mattarello su un piano infarinato dandogli una forma rettangolare e larga a sufficienza per poter contenere le mele: l’impasto dovrebbe essere sottile, ma non troppo sottile, dovreste poterlo maneggiare senza che si rompa.
- Riponete il ripieno di mele al centro della frolla e “chiudete” lo strudel ripiegando i bordi di frolla sopra le mele, proprio come se steste facendo un pacco regalo!
- Spennellate la frolla con un uovo, poi infornate a 180C per 30 minuti: spegnete il forno e lasciate lo strudel dentro per ancora 5~10 minuti prima di sfornare.
- Fatelo raffreddare, decoratelo con zucchero o eritritolo al velo e servite.
- Ottimo da solo, con dello yogurt o con una pallina di gelato alla vaniglia!
