GLUTEN-FREE CARROT BUNDT CAKE – CIAMBELLA SENZA GLUTINE ALLE CAROTE
Da quando mi sono trasferita negli Stati Uniti, la torta di carote è diventata la mia “nuova” tradizione pasquale: niente Colomba o Pastiera Napoletana, di cui non sono mai stata un’amante… della torta di carote, invece, mi sono innamorata subito!
Qui negli Stati Uniti è proprio questa torta a far da regina in occasione della Pasqua: che si vada ad un pranzo in compagnia di amici e famiglia o al ristorante, quasi sicuramente vi ritroverete a fine pasto con una fetta di torta di carote, con una glassa dolcissima, che in realtà è la parte di questa torta che io scarto perché per me nauseabonda.
La torta di carote potrebbe sembrare un dolce “salutare” ma la gran parte delle volte non lo è perché – come del resto il 90% dei dolci americani – è piena di zucchero! Ragione per cui, dopo averla assaggiata un po’ di volte, me ne sono uscita con una mia versione più salutare. Meno zucchero, niente glutine, niente latticini, solo ingredienti di qualità! Quindi, se ne mangio 3 fette, non sarò comunque appesantita.
Quest’anno l’ho preparata molto semplice e ho fatto solo la torta, senza glassa: dato che la torta è già ottima di suo, la glassa, a mio dire, non è necessaria anche se in realtà la mia fetta di torta l’ho mangiata accompagnandola a della crema al burro di cocco che ho fatto semplicemente mescolando la dura parte del burro di cocco con un po’ di acqua tiepida. Una DELIZIA!
Questa torta è senza latticini e senza glutine, ma potete usare farina 00 o 01, anche se potrebbe essere necessario cambiare un po’ il dosaggio degli ingredienti umidi se si utilizza una farina diversa.
Come al solito, se vi piacciono le torte molto dolci, aumentate la quantità di zucchero: chi mi conosce sa che non sono (più) una fan dei dolci “dolcissimi”.
Una nota sul tempo di cottura: questo varia in base alle dimensioni e alla forma della teglia. La mia era una teglia a forma di ciambella da 22cm, quindi se usate una teglia più grande o più piccola o una normale teglia rotonda, potreste aver bisogno di cuocere la tua torta qualche minuto in più o in meno, basta tenerla d’occhio dopo i primi 35 minuti.Io per il dosaggio ho usato i misurini (cups) americani: se li avete usate quelli, i grammi sono ottenuti semplicemente da un convertitore online quindi non sono accuratissimi.
[ENG] Since I moved to the US, carrot cake has become my “new” Easter tradition: nothing like the Italian “Colomba” or “Pastiera Napoletana”, two desserts that I’m absolutely NOT a fan of.
Here in the US carrot cake is what you’ll most likely find at a family Easter lunch or as a dessert option in restaurants: needless to say, I became a fan of carrot cake immediately, with the exception of its frosting that for me – unless I make it myself – is overly sweet and I end up discarding it all the times.
While carrot cake may sound like a healthy dessert, in fact, most times it is not as it’s literally “packed” with sugar: this is why I had to come up with my own healthy versions of this dessert. Less sugar, no gluten, no dairy, only quality ingredients!
So that if I eat 2 large slices of it, I’ll be just fine!!
This year I kept it simple and I made the cake only, without frosting: since the cake is already excellent of its own, the frosting is not necessary although I loved eating my cake with some coconut butter cream that I made by simply mixing the hard part of coconut butter with a tiny bit of warm water. DELICIOUS!
This cake is dairy-free and gluten-free but you can totally use regular flours, although the wet ingredients dosage may need to be adjusted if using a different flour.
As usual, if you like your desserts sweet, go ahead and increase the amount of sugar: those who know me, know I’m not a fan (anymore) of very sweet desserts.One note about the cooking time: time in the oven varies based on the size and shape of the pan. Mine was a 9” donut-shape pan (22cm), so if you’re using a larger or smaller one or a solid round pan, you may need to cook your cake a few minutes more or less, just keep an eye on it after 35 minutes.

- 300 g farina di mandorle (2 tazze)
- 150 g Farina di miglio (1 tazza)
- 2 cucchiaini lievito in polvere
- 2 cucchiaini cannella in polvere
- 1/2 cucchiaino Noce moscata
- 1/2 cucchiaino Zenzero macinato
- 2 uova
- 2 albumi d'uovo
- 60 g olio di cocco (1/4 tazza, sciolto)
- 80 g sciroppo d'acero (1/3 tazza)
- 60 g Purea di mele (1/4 tazza, non zuccherata)
- 80 g Yogurt di cocco (1/3 tazza, va bene anche un altro yogurt, purché neutro)
- 200 g Carote grattugiate
- 80 g Noci Pecan (tritate grossolanamente)

- Preriscaldate il forno a 180ºC.
- Ungete con dell’olio di cocco una teglia a forma di ciambella e mettetela da parte.
- In una terrina capiente, mescolate con una frusta gli ingredienti secchi.
- Separatamente, amalgamate gli ingredienti liquidi.
- Unite i due composti e rimestate fino a quando non saranno completamente amalgamati.
- Aggiungete ora le carote grattugiate e le noci pecan tritate grossolanamente.
- Versate l’impasto nella teglia e infornate: fate cuocere all’incirca 40 minuti, ma tenete d’occhio la torta dopo i primi 35. Quando è pronta, sfornate immediatamente.
- Lasciate raffreddare la torta prima di trasferirla su un piatto e decorate poi a piacere.
- Io mi sono tenuta sul semplice e l’ho spolverizzata con un po' di eritritolo al velo.
- Io l’ho trovata ottima accompagnata con un po' di crema di burro di cocco!

- 2 cups almond meal
- 1 cup Millet flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 2 eggs
- 2 egg whites
- 1/4 cup melted coconut oil
- 1/3 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1/3 cup coconut yogurt (or yogurt of choice)
- 1.5 cups grated carrots
- 1/2 cup chopped pecans (or nuts of choice)

- Preheat the oven to 350ºF. Grease a bundt pan and set aside.
- In a large bowl, whisk together the dry ingredients.
- In a separate bowl, beat together the wet ingredients.
- Pour the wet ingredients into the dry ones and stir together until fully combined.
- Fold in grated carrots and nuts.
- Transfer the cake batter to the prepared baking pan.
- Bake on the center rack for 40 minutes, then remove immediately from the oven.
- Allow the cake to cool down to room temperature, then transfer it onto a plate and decorate as you wish. I kept it simple and sprinkled some powdered erythritol on top.
- For serving, I loved it with some drizzled coconut butter on top!
