ALMOND COOKIES: VEGAN, GLUTEN-FREE ~ BISCOTTI DI MANDORLE: VEGAN, SENZA GLUTINE
Love cookies but do not want to indulge in anything unhealthy?
These soft and chewy cookies are for you then!!
They are not only vegan but also gluten-free and free of refined sugars.
To sweeten them I in fact used raw coconut sugar, which is way different than the usual coconut sugar you are most likely to find on the store shelves: it comes in the form of dark grown granules, quite sticky and not easy to separate. While it is a healthier version (less processed), it may not always be ideal for cooking as it tends to form clusters rather than spreading evenly in the batter. Although I found it ideal for these cookies and the sugar is what gives them the broniwsh spots they have here and there. If you do not have raw sugar, feel free to sub it with regular coconut sugar or brown sugar or whatever sugar or sweetener you’d like.
These cookies are not too sweet: you may want to increase the dosage of sugar if you want them sweeter.
Each cookie is filled with only a couple dark chocolate chunks: feel free to increase the amount of chocolate chips, I preferred to stay low on the chocolate to reduce the amount of fats (there’s already enough almond butter) and because I’m recently finding out that my beloved chocolate is giving me a bit of skin inflammation, so I’m trying to reduce it as much as I can.
One more note on the almond butter: the one I used was homemade and was pretty thick, more of a paste than a butter. This is why I used it to make cookies, cause it would be too hard to spread on the bread. If you use a butter that is quite liquid, you may need to increase the amount of flour to reach the same sticky consistency.The batter came out VERY STICKY, but that’s how it is supposed to be. Greasing your hands with coconut oil to handle it or using an ice-cream scoop and spoon will definitely help in scooping out the batter and shaping it into balls.
Se siete amanti dei biscotti (chi non lo è?!??) ma non volete compromettere la linea… questi fanno per voi!
Non sono solo vegani ma anche senza glutine e senza zuccheri raffinati.
Per dolcificarli ho infatti utilizzato lo zucchero di cocco grezzo (acquistato da Natura Si) che è molto diverso dallo zucchero di cocco che trovate in genere al supermercato: si presenta sotto forma di granuli scuri, piuttosto appiccicosi e non facili da separare. Sebbene sia una versione più sana (meno lavorata), non è sempre l’ideale per prodotti da forno e dolci poiché tende a formare dei grumi e non amalgamarsi uniformemente con gli altri ingredienti. Nonostante ciò, l’ho trovato ideale per questi biscotti ed è proprio questo zucchero che dà loro quelle macchie marroncine che vedete in foto (che non sono cioccolato!). Se non avete lo zucchero grezzo di cocco, va benissimo sostituirlo con zucchero di cocco normale o zucchero di canna o qualsiasi altro zucchero o dolcificante desideriate.
Questi biscotti non sono troppo dolci: aumentate il dosaggio di zucchero se li volete più dolci.
Ogni biscotto è farcito solo con un paio di pezzettini di cioccolato fondente: siete liberi di aumentare la quantità di gocce di cioccolato. Io ho preferito contenermi col cioccolato per ridurre la quantità di grassi (ce n’è già abbastanza col burro di mandorle) e perché sto riscontrando di recente che il mio amato cioccolato mi sta provocando un po’ di infiammazione della pelle, quindi sto cercando di ridurlo il più possibile.
Una nota importante sul burro di mandorle: quello che ho usato è fatto in casa ed era piuttosto denso, più una pasta che non un burro liscio e tendente al liquido. Per questo l’ho usato per fare i biscotti, perché sarebbe troppo difficile da spalmare sul pane. Se usate un burro abbastanza liquido, dovreste forse aumentare la quantità di farina per ottenere la stessa consistenza compatta e appiccicosa.Il composto deve rimanere MOLTO APPICCICOSO: per maneggiarlo quando formate le palline, suggerisco di ungervi le mani con olio di cocco.

- 200 g Almond paste or butter (read intro)
- 200 g GF Flour mix
- 200 g unsweetened almond milk (mine was homemade)
- 100 g raw coconut sugar (read intro)
- Dark chocolate chunks or chips as needed
Ingredients

- Mix all ingredients together in a bowl, EXCEPT the dark chocolate chunks.
- Since the batter is extremely sticky and it is quite hard to mix with just a spatula, you will need to use your hands to mix the ingredients well.
- Using an ice-cream scoop and/or a spoon, scoop out some batter from the bowl, add a couple chocolate chunks in the middle and then cover up and form a ball, that you’ll place on a backing pan, previously greased with coconut oil. If you’re using your hands to shape the balls, I highly recommend you grease them with coconut oil as it will make your job much easier!
- I obtained 14 cookies about 2.5” in diameter (once flattened), but it all depends on the size you choose to give them.
- Once all batter has been used, place the balls in the fridge for about 10~15 minutes, then remove from the fridge, flatten your cookies with your hands or with the bottom of a glass and let sit at room temperature for another 5 minutes before placing in the oven.
- Heat the oven at 350F and bake for 15 minutes, then remove immediately and cool on a rack.
- Enjoy with coffee or tea for breakfast or as a snack!

- 200 g Pasta o burro di mandorle (leggi introduzione)
- 200 g Mix di farina SENZA GLUTINE
- 200 g Latte di mandorle non zuccherato il mio era fatto in casa
- 100 g Zucchero di cocco grezzo (leggi introduzione)
- Scaglie o gocce di cioccolato fondente a piacere

- Mescolate tutti gli ingredienti in una ciotola, TRANNE le gocce di cioccolato fondente.
- Poiché l’impasto è estremamente appiccicoso ed è abbastanza difficile da mescolare con una spatola, consiglio di usare le mani per amalgamare bene gli ingredienti.
- Con una paletta da gelato e/o un cucchiaio, raccogliete un po' di impasto, aggiungete al centro un paio di pezzi di cioccolato fondente e poi coprite e formate una pallina (delle dimensioni che volete) che andrete ad adagiare e su una teglia piatta, precedentemente rivestita di carta forno, unta con olio di cocco. Se usate le mani per fare le palline, vi consiglio vivamente di ungerle con olio di cocco perché renderà il lavoro molto più semplice!
- Io ho ottenuto 14 biscotti di circa 6cm di diametro (una volta sappiattiti), ma tutto dipende dalla dimensione che scegliete di dargli.
- Una volta che tutto il composto è stato utilizzato, mettete le vostre palline in frigo per circa 10-15 minuti, poi togliete dal frigo, appiattite un po’ i biscotti con le mani o con il fondo di un bicchiere e lasciate riposare a temperatura ambiente per altri 5 minuti prima mettere in forno.
- Riscaldate il forno a 350°C e infornate per 15 minuti, quindi rimuovete immediatamente e fate raffreddare su una griglia.
- Ottimi con caffè o tè a colazione o come spuntino!
